Coconut Muffin Recipe

These muffins are good for replenishing energy after a race, you can substitute the coconut for whatever you like (apples, raisins, almonds etc.)

1 egg
1/2 cup of milk
3 tablespoons apple juice
1 teaspoon vanilla extract

1/2 teaspoon salt
2 teaspoons baking powder
1/2 cup sugar
1 cup coconut (dried and grated)
1.5 cups flour

Mix together wet and dry ingredients separately, then combine. Bake at 350 degrees for 25 minutes.

Makes around 9 big muffins

But, what is the Apple Juice for? Or, am I being stupid?

I think it acts as a sweetner. I would also appreciate some flapjack recipes if anyone has any!

I use plain flour and skimmed milk.
