Smile Fish Pie - Winter Warmer

Made this up last night based on a dish the OH does... it's not often I impress myself but corr blimey this was as tasty as anything!!!

----------------------------------------------------------------------

You will need:
350g-450g Fish - (recommended mix of salmon, smoked haddock & cod - Conviniently tesco do a 'Fish Pie Mix' which is perfect)
1 large or 2 Med Onions
1x Courgette (or other veg if you'd prefer)

For topping:
Potatoes for mashing (probably enough for 2-3 people)
Handful of grated cheese

For Cheesey Sauce:

1tbsp Plain Flour
1tbsp Butter
1/2 pint Milk
150g Cheese (Anything like cheddar etc... grate it to make life easier)
Salt + pepper to season


Guidelines:
- Put peeled/chopped Potatoes on to boil for 20mins ready to mash,
- Chop onion & courgette, start to fry in a pan... after 5mins add fish mix

- Melt butter in another pan, and slowly stir in flour to make a paste.
- Continuing to heat, VERY slowly add milk whilst stirring, making sure no lumps form, (if they do stir vigorously till the buggers disappear).
- Melt in cheese, add salt & pepper to taste, you now have the tastiest cheese sauce around

- Put Fish, onion & courgette mix into a small casserole dish.
- Pour cheese sauce over the top (if there's any left after sampling it )
- Mash potatoes (with a knob of butter and dash of milk), and layer on top of contents of casserole dish.
- Sprinkle with grated cheese.

Place in Oven of ~180deg'C for 15-20mins... eat and enjoy.

I know this is probably an incredibly simple and basic recipe for many, but it's the first time I've cooked it and I was amazed, worth trying if you're a fish fan and haven't tried it before.

Richard

Few help ful hints that will make it eaven tastier in your cheese sauce add a teaspoon of english mustard to it will enhance the cheese flavour.

I add seafood in just before i put into oven proof dish will cook through when in oven and adds a bit of variety.

Last one if your not a fan of courgettes add mushrooms and sliced leeks gives it a totally yummy flavour.

Cheese and fish? Wrong, wrongitty wrong. Wronger than a wrong thing, in fact

For other people who find the idea of putting cheese and fish together somewhat bizarre (or maybe it's just me...):

My own recipe is, in fact, remarkably similar (but don't ask me quantities - I sling in my scientifically defined "about the right amount" of stuff), but without, clearly, the cheese and also without the veg (that's served up separately). My sauce is made with a large glass of white wine (add it before the milk and wait till the alcohol has cooked off, then use milk as in RS's recipe) and a large handful of chopped fresh parsley*. I also put a couple of hard-boiled eggs, chopped into quarters, in with the fish. I'm not keen on eggs, but they work so well in the fish pie, that I am happy to make an exception.

* I keep meaning to try it with fresh tarragon instead, but somehow never remember this when buying the ingredients.

No by all means add comments and that for other people to try... much like running it's very much a recipe that can be tailored to suit your own perference!

I've had it with mustard powder in the past and it really does give it and extra deep flavour and something a bit different mmmmm tasty - The cheese sauce as above is smooth and creamy, either way is going to be a success

Tried fishy cheesey things several times. No more. It's bleeeurgh. Just wrong.

I can't even put parmesan in a fishy risotto - I use creme fraiche instead.

I recommend you try the white wine version, with boiled eggs, some time, too - it's fab. You can really taste the wine (I confess, my "glass" may be a very large one - it's more of a slosh, a glug, and a splash for luck type of measure!) and the eggs just go so well with it.

Which reminds me. I haven't made my fennel and prawn risotto for aaaages. Must do something about that.

Instead of the courgette I blanch some broccoli then put it in the bottom of my dish and put the rest on top of it! Yum!
