Power Packed Vegan Protein Recipe

Just had the most incredible, protein and carbohydrate meal I've ever had! And it was completely meat free! For a veggie-veganish runner, this recipe is the real deal and hours after eating it my stomach is still full.

If you want to try your hand at making this delicious dish you can find the recipe at: Google Books page 189 or you can purchase the book via the publisher's site: Angelica's Kitchen.

I've never had a problem with my meatless diet nor have I had any injuries. So, if any of you fellow runners are thinking of going veggie or vegan don't worry, there's plenty of protein to come by and you'll be helping to reduce a large carbon foot print.
